Ugadi Pachadi

Instructions
Grate fresh jaggery and add 1 cup water and stir till it melts. Strain it well to remove impurities.
Soak tamarind in ΒΌ cup water for about 40 minutes to 1 hour (refer notes). Then squeeze the tamarind pulp, mix with 1/4 cup water and keep it aside.
Pluck the fresh neem flowers from sprigs. If you can't find fresh ones, you can use dried neem flowers as well.
Add strained jaggery water and tamarind pulp to a bowl.
Add raw mangoes, neem flowers, salt, pepper.
Mix well and serve.
Notes
If you are short of time, add tamarind to boiled water and set aside for 5 minutes. Ssqueeze the pulp and follow the rest of the recipe
