Instructions
Soak rice for 30 minutes.
Heat ghee and oil in a pan. Add all ingredients mentioned under dry spices and cook for a minute.
Add chopped onion and cook for 3-4 minutes till it turns light golden brown.
Add mushrooms and cook for 2-3 minutes.
Add ginger garlic paste, salt, garam masala and cook for 3-4 minutes till the raw smell goes away.
Cook till mushrooms are 50% done and tender. Add 11/2 cup of water, bring it to boil and add soaked rice.
Mix well and add chopped coriander.
Cook on high flame for 1 whistle. Turn off the stove and leave it for 15-20 minutes.
Serve hot with raita or curry.
Notes
Soak rice for 30 minutes.
Chop each mushroom into 4 pieces.
