Idli is one of the most popular South Indian breakfast dishes. It is naturally vegetarian, vegan, gluten-free and makes for one of the healthiest breakfast options.
If you don't have idli rava, there is another method to make soft idlis.
While soaking urad dal, soak parboiled rice in a separate bowl for 4-6 hours. Add water and grind it separately to coarse consistency. Mix with urad dal batter and ferment it overnight. Rest of the recipe is same.
Add salt only after the batter is fully fermented.
Store the remaining batter in refrigerator.
It can be used to make crispy dosa or uthappam.
