Ugadi Pachadi

Ugadi is celebrated as new year in the states of Karnataka, Andhra Pradesh and Telangana. Learn how to make Ugadi pachadi in a simple and traditional way.

Ugadi pachadi is a festive food drink containing 6 ingredients having the 6 tastes that correspond with the 6 emotions of life.

  1. Jaggery – sweet taste and represents Joy or happiness
  2. Unripe mango – tangy, astringent and represents Surprise
  3. Black pepper – spicy, hot and represents anger
  4. Tamarind – sour taste and represents unpleasantness
  5. Neem flowers – bitter and represents sadness
  6. Salt – salty and represents fear

It is the first dish one has during the Ugadi festival after offering it to the deities. Apart from the health benefits of this festive drink, Ugadi pachadi also signifies that one has to accept life with all its facets.

Instead of black pepper powder you can also use red chili powder or green chilis. But the traditional Ugadi pachadi was made with black pepper as chilis weren’t native to India.

There are no set proportions for making the recipe and you can always add the 6 ingredients less or more as per your choice. This recipe gives you a balanced Ugadi pachadi with all the 6 tastes coming through. Generally new tamarind, new jaggery and raw baby mangoes are used.

STEP BY STEP UGADI PACHADI RECIPE INSTRUCTIONS WITH PHOTOS:
  1. Grate fresh jaggery and add 1 cup water and stir till it melts. Strain it well to remove impurities.

2. Soak tamarind in ¼ cup water for about 40 minutes to 1 hour. Then squeeze the tamarind pulp and keep it aside.

3. Pluck the fresh neem flowers from sprigs. If you can’t find fresh ones, you can use dried neem flowers as well.

4. Add strained jaggery water and tamarind pulp to a bowl.

5. Add raw mangoes, neem flowers, salt, pepper.

6. Mix well and serve.

Ingredients
  

  • 1 1/2 cup Water
  • 4-5 tbsp Jaggery grated
  • 1 tbsp Neem flowers
  • 2 tbsp Mango Raw and chopped
  • 1 pinch Salt
  • 1 pinch Pepper powder
  • Coin sized Tamarind

Instructions
 

  • Grate fresh jaggery and add 1 cup water and stir till it melts. Strain it well to remove impurities.
  • Soak tamarind in ¼ cup water for about 40 minutes to 1 hour (refer notes). Then squeeze the tamarind pulp, mix with 1/4 cup water and keep it aside.
  • Pluck the fresh neem flowers from sprigs. If you can't find fresh ones, you can use dried neem flowers as well.
  • Add strained jaggery water and tamarind pulp to a bowl.
  • Add raw mangoes, neem flowers, salt, pepper.
  • Mix well and serve.

Notes

  1. If you are short of time, add tamarind to boiled water and set aside for 5 minutes. Ssqueeze the pulp and follow the rest of the recipe
