Learn to cook Goruchikkudu fry (Cluster beans recipe)- Cluster Beans are high in fiber.
Cluster beans are harder than other beans, so these are mostly precooked before frying or making curry. Use only tender Cluster Beans. Remove the fibrous string before boiling.
Usually, Cluster Beans do not offer much variety by way of recipes except curry and fry.
STEP BY STEP GORUCHIKKUDU FRY (CLUSTER BEANS) INSTRUCTIONS WITH PHOTOS:
- Take 2 cups of chopped cluster beans in a pan, add salt (refer notes) and water.
2. Boil it for 15-20 minutes till they are completely cooked.
3. Drain it completely and set aside.
4. Heat oil in a pan and add mustard seeds, dals, split red chilis and curry leaves. Cook till they splutter.
5. Add boiled cluster beans (Goruchikkudu) to the pan.
6. Add turmeric, red chili powder and crushed garlic.
7. Mix well and cook for 5-10 minutes. You can add freshly grated coconut(Optional).
8. Serve with steamed rice or dal rice.

Ingredients
- 2 Cups Cluster beans (Goruchikkudu) Chopped
- 3 Cups Water
- Salt to taste
- 2 tbsp Oil
- 3 Red chili split in half
- Few Curry leaves
- 1/2 tbsp Mustard seeds
- 1/2 tbsp Urad dal
- 1/2 tbsp Chana dal
- 1/4 tbsp Turmeric
- 1 1/2 tbsp Chili powder
- 4-5 Garlic pods crushed
Instructions
- Take 2 cups of chopped cluster beans in a pan, add salt (refer notes) and water.
- Boil it for 15-20 minutes till they are completely cooked.
- Drain it completely and set aside.
- Heat oil in a pan and add mustard seeds, dals, split red chilis and curry leaves. Cook till they splutter.
- Add boiled cluster beans (Goruchikkudu) to the pan.
- Add turmeric, red chili powder and crushed garlic.
- Mix well and cook for 5-10 minutes.
- Serve with steamed rice or dal rice.
Notes
- Add required amount of salt while boiling the beans. They don’t absorb well while frying.
