Dondakaya Stir Fry – Learn to cook Dondakaya/ Tindora Stir Fry with step by step photos below. There are many variations to this recipe across various states in India depending on the region and individual taste.
It is a very simple recipe cooked with very less ingredients. To make this recipe use chopped dondakaya pieces.
Ivy gourd is called as Dondakaya in Telugu, Kovakka in Tamil, Kundru, Tendli in Marathi, Kovakka in Malayalam. It is a good source of fiber, beta-carotene and other micronutrients.
STEP BY STEP RECIPE DONDAKAYA STIR FRY WITH PHOTOS:
- Wash the vegetables and dry them completely. Chop dondakaya into small pieces.
- Heat oil in a pan, add mustard, dals, red chili and curry leaves.
3. Once the dals turn golden, add chopped dondakaya pieces with some turmeric. Let it cook for 15 mins.
4. Check if the pieces are cooked (you can cover and cook it to speed up the process), then add salt and chili powder.
5. Mix it well, add garlic and let it cook for 5-8 minutes until the raw smell of garlic goes away.
6. Garnish with fried curry leaves and serve with steamed rice.

Dondakaya Stir Fry (Tindora/ Ivy gourd)
Ingredients
- 2 Cups Dondakaya Tindora/ Ivy gourd
- 2 Split Red chili
- 1/2 tbsp Urad dal
- 1/2 tbsp Chana dal
- 1/4 tbsp Mustard seeds Avalu
- Few sprigs Curry leaves
- 1/4 tbsp Turmeric
- 1 tbsp Salt
- 1 tbsp Chili powder
Instructions
- Wash the ivy gourd under running water and dry them completely. Chop dondakaya into small pieces.
- Heat oil in a pan, add mustard, dals, red chili and curry leaves
- Once the dals turn golden, add chopped dondakaya pieces with some turmeric. Let it cook for 15-20 mins.

Notes
- Crush garlic before adding in the curry to release flavors.
- Serve it with steamed rice, dal rice or curd rice.
