Dondakaya fry with Peanuts /Tindora fry / Ivy gourd fry recipe – It is a specialty of Andhra cuisine. It is called dondakaya in telugu, tindora in hindi and ivy gourd in english.

We can cook stir fry, pachadi (pickle), stuffed dondakaya and many other recipes with ivy gourd. Serve with steamed rice, dal rice, curd rice or rasam.

This recipe can be made with stir fried ivy gourd instead of deep frying but it takes longer and doesn’t turn as crispy as the deep fried pieces.

STEP BY STEP DONDAKAYA FRY WITH PEANUTS RECIPE INSTRUCTIONS WITH PHOTOS:
  1. Wash the ivy gourd, remove the tips on both ends and chop vertically into 4 pieces.

2. Heat oil and deep fry the ivy gourd (Dondakaya / tindora) till they turn dark green brown. They should be crispy and soft.

3. Take a separate pan, add 2 tbsp oil (use the same oil from deep frying) and fry curry leaves until crisp. Set them aside for garnishing.

4. Now, add deep fried ivy gourd pieces, salt, chili powder and cumin powder and cook.

5. Add roasted peanuts and cook for 5 minutes.

6. Garnish with fried curry leaves and serve with steamed rice.

Ingredients
  

  • 2 cups Dondakaya (Tindora / Ivy gourd)
  • Oil For deep fry
  • 1/4 cup Roasted peanuts Refer notes
  • 8-10 Curry leaves
  • 1 tbsp Salt
  • 1 tbsp Chili powder
  • 1/2 tbsp Jeera powder Cumin

Instructions
 

  • Wash the ivy gourd, remove the tips on both ends and chop vertically into 4 pieces.
  • Heat oil and deep fry the ivy gourd (Dondakaya /tindora) till they turn dark green brown. They should be crispy and soft.

  • Add deep fried ivy gourd pieces, salt, chili powder and cumin powder and cook.
  • Add roasted peanuts and cook for 5 minutes.
  • Garnish with fried curry leaves and serve with steamed rice.

Notes

  1.  Dry roast peanuts. 
  2. You can stir fry the dondakaya pieces instead of deep frying but they take more time and are not as crisp.
  3. Serve with steamed rice, dal rice or curd rice.
