Learn how to make carrot fry recipe. Carrot fry is a popular dish in South India. This carrot stir fry is similar to carrot poriyal from Tamilnadu or carrot mezhukkupuratti from Kerala. It can be cooked with or without coconut.
Carrots are good for health and we all are familiar with the benefits of carrot. This is a fun way to ensure everyone in the family receives the goodness of carrots while relishing it.
Carrots are used in combination with many vegetables like potatoes, peas, beans and many more. It can be used in mixed vegetable curry, pulao, carrot beans curry, carrot halwa, carrot pickle, soup, salad, juice.
This carrot fry is a basic version, and it is similar to any another stir fry recipe. It is easy to cook, tastes delicious with mild spices yet flavorful. This carrot stir fry is made in a simple way with basic spices and with basic South Indian style tempering.
You can play around with whatever ingredients you have on hand. I used cumin powder and curry leaves as the main spice which made for a good combination of flavors and adds unique aroma.
This recipe goes well with any flavored rice, steamed rice, dal rice or rasam rice, pulka or naan. Stir fry recipes are common in most regions of India.
STEP BY STEP CARROT FRY INSTRUCTIONS WITH PHOTOS:
- Heat 3-4 tbsp oil in a pan. Add red chilis, mustard seeds, urad dal and let them splutter.
2. Add onions, curry leaves and turmeric.
3. Cook for 3-4 mins till the onions turn translucent.
4. Add chopped carrot pieces to the pan. Cook for 15 minutes on medium flame.
5. Then add salt and cumin powder, mix well. Cook for 5 minutes.
6. Now add chili powder and cook for 10-15 minutes till done.
7. Add shredded coconut and cook for 2 minutes till the raw smell goes away.
8. Serve with steamed rice or dal rice.

Carrot fry recipe
Ingredients
- 8-10 medium Carrot refer notes
- 2 medium Onions refer notes
- 1 1/2 tbsp Salt
- 2 tbsp Chili powder
- 1/4 tbsp Turmeric
- 1 tbsp Cumin powder Jeera
- 3-4 tbsp Oil
- 2 Red chilis Split in half
- 1/4 tbsp Mustard seeds
- 1/2 tbsp Urad dal
- Few Curry leaves
- 3 tbsp Grated coconut Optional
Instructions

Notes
- For 1 cup of chopped onions, use 2- 2 1/2 cups of chopped carrot.
- You can use grated carrot instead of chopped for this recipe to cook it fast.
- Adding shredded coconut gives coastal touch to the recipe.
