Learn to cook Chicken fry- This recipe is a quick and easy recipe where the chicken is sautéed along with onions, green chilis, curry leaves and spices like coriander powder and garam masala are added to give extra flavor.
There are different methods of making chicken fry. But this version of Andhra stir fried chicken is easy to cook but high on flavors. All the ingredients used are commonly available.
Chicken is a low-fat protein which helps in building the muscles of the body. It has good amount of zinc, iron and also vitamins like Vitamin B.
Serve this tasty chicken fry as starter, side dish or with steamed rice & rasam.
STEP BY STEP CHICKEN FRY RECIPE INSTRUCTIONS WITH PHOTOS:
- Heat oil in a pan. Add chopped onions, slit green chilis, curry leaves and cook for 2-3 minutes.
2. Add turmeric, mix well and cook for 2-3 minutes.
3. Add ginger garlic paste and cook for 2 minutes till the raw smell goes away.
4. Add chicken pieces, salt and chili powder. Mix well, cover and cook for 10-15 minutes till it is completely cooked. (Check notes)
5. Once the chicken is almost cooked, add garam masala, cumin powder and coriander powder. Mix well and cook for 5-8 minutes till it becomes dry.
6. Garnish with chopped coriander and serve hot with steamed rice and Tamarind Rasam – Without Jaggery.

Ingredients
- 500 grams Chicken Curry cut
- 3 tbsp Oil
- 1 big Onion chopped
- 2 Green chili slit
- Few Curry leaves
- 1/4 tbsp Turmeric
- 1 tbsp Ginger garlic paste
- 1 1/2 tbsp Salt
- 2 tbsp Chili powder
- 1 tbsp Garam masala powder
- 1 tbsp Coriander powder Dhaniya
- 1 tbsp Cumin powder Jeera
- Few Coriander leaves chopped
Instructions
- Heat oil in a pan. Add chopped onions, slit green chilis, curry leaves and cook for 2-3 minutes.
- Add turmeric, mix well and cook for 2-3 minutes.
- Add ginger garlic paste and cook for 2 minutes till the raw smell goes away.

Notes
- You can marinate the chicken for 1 hour with salt and chili powder.
- If the chicken is still undercooked but there is no moisture, add 1/2 cup of water and cook till it is completely done.
