Aakakarakaya Fry Recipe/ Teasel gourd Fry – Learn how to cook Aakakarakaya Fry.
Commonly called as Spine gourd or Teasel gourd in English, Kantola in Hindi, Aakakarakaya in Telugu. Sometimes called as small or forest bitter gourd.
Generally, people confuse bitter gourd with this vegetable. As Spine gourd has feature closely related to the bitter gourd but does not have the same taste. One can easily identify teasels as these gourd vegetables are round in shape and are also shorter in the length.
Teasel gourd is a highly nutritional vegetable. It lowers the blood sugar level and is good for diabetics. Lower the level of blood sugar in diabetic patients. High in fiber and antioxidants and thus very useful for easy digestion. This is a great health food as it is rich in proteins, iron and is low on calorie. It contains only 17cal/100g. The phytochemicals present in teasel gourd help in promoting the health.
Since it is mostly available during monsoons, it must be used regularly to keep seasonal cough, cold and other allergies away. It exhibits anti-allergen and analgesic properties that provide relief from cough, cold and also prevent it.

STEP BY STEP AAKAKARAKAYA FRY RECIPE INSTRUCTIONS WITH PHOTOS:
- Wash the vegetables thoroughly and pat dry completely. Then peel and chop them into small pieces.
2. Heat oil in a pan, add red chilis, mustard seeds and urad dal. Let them splutter.
3. Add finely chopped onions, curry leaves and turmeric and cook till they turn transparent.
4. Add chopped teasel gourd pieces and cook for 15-20 minutes.
5. Add salt, chili powder and cook for 5-8 minutes till completely done.
6. Add jaggery, mix well and turn off the flame.
7. Serve with steamed rice.

Ingredients
- 2 Cups Teasel gourd or Aakakarakaya
- 2 Cups Onions
- 2 tbsp Salt
- 3 tbsp Chili powder
- 1/4 tbsp Turmeric
- 1 tbsp Jaggery
- 4 tbsp Oil
- 6-8 Curry leaves
- 2 Split Red chili
- 1/4 tbsp Mustard seeds
- 1/4 tbsp Urad dal
Instructions

- Add jaggery, mix well and turn off the flame immediately.
- Serve with steamed rice.
Notes
- Lightly peel the teasel gourd to remove bitterness.
- Remove seeds if they are hard or ripe.
