Vegetable Pulao in Rice cooker/ Pressure cooker recipe – This Vegetable pulao is one of the most delicious and quick rice recipe. It doesn’t require much cooking skills and time.
Cook in rice cooker, pressure cooker or in a pan. We can use basmati rice, regular white rice, brown rice in this recipe. Just refer to the package instructions for water quantity and cooking time.
Serve with simple Onion Raita or some tasty vegetable curry.
STEP BY STEP INSTRUCTIONS OF VEGETABLE PULAO RECIPE WITH PHOTOS:
- Soak rice for 30 minutes.
- Heat ghee/ oil in a pan, add spices under tempering and let them splutter.
- Add chopped carrot, beans, potato, and baby corn (I have not used it in this recipe) and cook for 2-3 minutes.
4. Add chopped tomatoes, salt, chili powder, masala powder and let it cook for 2 minutes.
5. Add soaked rice to pan and fry it for a minute for rice to absorb the flavors.
6. Transfer it to rice cooker or pressure cooker and add required water (refer notes), mint and coriander leaves.
7. If using a pressure cooker, cook for the same amount of time required to cook normal rice (its 2 whistles for my cooker).
8. Garnish with coriander leaves and serve it with Onion Raita.

Ingredients
- 2 medium Carrot
- 1 medium Potato
- 3 green beans
- 1 medium tomato
- 2 baby corn
- 2 Green chili
- 1 1/2 cups Soaked Rice Refer notes
- 3 cups Water Refer notes
- 1 tbsp Oil or ghee
- Chopped Coriander
- Chopped mint
- Salt to taste
- 1/2 tbsp Chili powder
- 1/4 tbsp Garam masala powder
Spices
- 2 Bay leaves
- 2 Cloves
- 1 Star anise
- 1 tbsp shah jeera

Notes
